Here are delicious multicolored verrine with plain Sardine and its Connétable lemon slice.
Preparation time : 30 minutes
Ingredients for 4 persons :
- 4 plain sardines and a slice of Connétable lemon
- 20 Cherry tomatoes (red and yellow)
- 3 avocados
- 1 ½ lemon
- ¼ red onion
- A few sprigs of chives
- A few sprigs of flat-leaf parsley
- Turmeric powder
- Espelette pepper
- Fleur de sel, pepper
Plain sardine verrine and lemon slice Connétable
1- Cut the tomatoes in 4, remove the pulp and cut the quarters into small cubes. Place in a bowl, add 2 tbsp of olive oil and 1 tbsp of lemon juice. Mix.
2 - Rinse the fresh herbs and chop them, then add them to the tomatoes. Mix.
3 - Add to the mixture 2 or 3 pinches of Espelette pepper, a turn of the pepper mill, a pinch of fleur de sel and 2 pinches of turmeric. To mix everything. Leave to rest for about 20 minutes in the fridge.
4 - Cut the avocados in half, discard the pits, collect the flesh and put them in a blender with the juice of 1/2 lemon. Add a touch of fleur de sel and mix.
5 - Gently cut the tail of the plain sardines and its slice of Connétable lemon and remove the central ridge.
6 - Divide the avocado puree among the verrines, add the tomato salsa and finish by placing a sardine on top.
